Sausage Casserole for two

Imagine biting into a thick, juicy banger sausage, its crispy skin bursting with flavor, complemented by the sweet caramelization of onions, the smoky char of peppers, and the tangy burst of cherry tomatoes.

This delicious sausage casserole recipe brings together all of that into a symphony of flavors, harmoniously cooked to perfection in an air fryer.
A delicious recipe which offers a healthier twist to a hearty meal without compromising on the indulgence of a well-cooked feast, or the flavors. This is quite simply quick, easy and delicious!
No Air Fryer?  No problem. You could certainly cook this tasty dish in the conventional way in a regular oven if you wish. Times would need to be adjusted as it would take a bit longer for everything to be cooked through and for the vegetables to achieve that same amount of caramelization.
In these warmer months I like to use my Air Fryer when I can. It helps to keep the heat out of the kitchen. I also like to use my electric counter top grill and my slow cooker.  All of these small kitchen appliances help me to keep my cool and I love them! In the few short years that I have had them, they have certainly paid for themselves, and I would not want to be without any of them.
Today’s recipe was inspired by one I discovered on the Delicious Magazine page.  Delicious was a magazine I subscribed to when I lived in the U.K. It was quite simply my favorite cooking magazine!
WHAT YOU NEED TO MAKE AIR FRYER SAUSAGE CASSEROLE FOR TWO
Just a few simple ingredients and an air fryer of course!. I do think you could also make this in a conventional oven as well. It just might take a bit longer for everything to cook through.
  • 2 medium onions, peeled and cut into wedges
  • 1 large red pepper, trimmed, seeded and cut into strips or diced
  • about 12 cherry tomatoes, halved (optional)
  • 2 TBS light olive oil
  • salt and black pepper to taste
  • 2 meaty thick sausages (you can use bangers or sweet Italian sausage)
  • 1 tsp fennel seeds
  • 1 1/2 tsp smoked paprika
  • 3 1/2 fluid ounces (100ml) chicken stock, apple juice, or white wine
The air fryer model I use is a Kuraidori  Multi-functional Digital Air Fryer.  It also came with a rotisserie arm that you can use to do a rotisserie chicken. I love it.  Its not really small, but isn’t huge either and fits very nicely on my counter top. It also has a window in the front for viewing.  
I find it very easy to use.  It came with a large  deep basket which is great for doing chips. My sister has roasted a chicken on more than one occasion to perfection in hers.  There are two smaller net type of baskets which I think are great for doing toastie sandwiches.
It also has an oven type of rack and a flat tray on the bottom, as well as a round cake/baking dish.  
I bought mine at Canadian Tire here in town. I highly recommend this model. I liked it so much I turned around and bought one for my sister!  We both love them and use them a lot. I had one before, a Cuisinart one.   I called that the cremator. It was too big, took up too much space,  and it burnt everything. I got rid of it.
I used regular cooking onions, the ones with the brown skins. They were about the size of an Indian Rubber Ball. (Remember those? Boy could they bounce!!)  
Remember when you peel them to leave as much of the root end intact as possible. This will help the onion wedges to hold together in the cooking.
My red pepper was quite large. If you don’t have a large one, then you can use two smaller ones. I had cherry tomatoes, but forgot to put them in. DOH!  
My sausages were the PC Banger’s sausages that you can get at the Super Store.  They come 5 to a pack. One sausage is more than adequate for one person. They are lovely and thick and juicy. 
If you can’t get them, then I think a mild Italian sausage would also go beautifully with all of the other flavors, or, if you like to spice things up, use a spicy one!
HOW TO MAKE AIR FRYER SAUSAGE CASSEROLE FOR TWO
This was very simple to make.  My air fryer has the option of using what looks like an oven rack instead of a basket. It was very simple to just pop the baking dish into the air fryer on top of the rack.



Preheat the air fryer to 400*F/200*C. Have ready a baking tray with a lip that will fit comfortably in your air fryer. (I have a round one that came with my air fryer.)



Place the onions, peppers and cherry tomatoes (if using) into the baking tray/dish. Drizzle with the oil and season with salt and pepper. Cook in the preheated air fryer for 10 minutes.



Remove from the air fryer. Give everything a good stir. Place the sausages on top. Sprinkle with the fennel seeds and smoked paprika.



Return to the air fryer and cook for a further 10 minutes at 400*F/200*C. Remove and flip the sausages over so that the browned side is now on the bottom. Pour the stock/juice/wine into the dish.



Return to the air fryer and cook for a further 8 to 10 minutes until the sausages have cooked through and are nicely browned and the veggies are all nice and soft.  Serve hot.




This was exceptionally delicious, even though I actually forgot to add my cherry tomatoes. I can only imagine how much more delicious it would have been with them!  The sausages looked quite brown but were beautifully moist and perfectly cooked inside!  
The flavors of the fennel and smoked paprika really enhanced all of the other flavors. I enjoyed this casserole spooned over a nice pile of fluffy mashed potatoes and added some steamed frozen corn on the side.  What a lovely meal this was! I really hope you will try it!
Sausage Casserole for two
I do love a good sausage, or “Banger” as it is called in the U.K. Here are some other ways that I like to enjoy them!
CHEESE, ONION & HONEY MUSTARD SAUSAGE BUNS This is a delicious twist on the traditional hot dog.  Perfect for bonfire night or any other night!  Quick and easy to do as well!  What you have here are grilled sausages on a bed of caramelized onions, with a honey and Dijon mustard cheese melted over top. All tucked into a toasty brioche bun.  Can you say scrummy?  I hope so because they truly are!
 


SAUSAGE & BLACKBERRY TRAY BAKE - Quick, easy delicious and perfectly sized for two people.  Thick sausages and a variety of vegetables roasted to perfection to perfection on a baking tray and then adorned with sweet/tart blackberries and a lush grainy mustard and maple glaze. So everything is sticky and tart and sweet and moreishly savory. Supper perfection I call this. A beautiful one-pan supper with robust flavors,  plenty of color and tasty flavors!  Different and delicious!
