Grilled Mediterranean Salmon Burgers with Tzatziki and a Wine Pairing -- SundaySupper

These Grilled Salmon Burgers with flavors from the warm and beautiful Mediterranean take just a few minutes to throw together, leaving you plenty of time to spend outdoors by the pool with your family and friends. A nice cool glass of Pinot Noir is my favorite wine pairing with these grilled salmon burgers. Gallo Family Vineyard’s Pinot Noir is a medium bodied wine, much less bold than a cabernet, and  provides a smooth and light finish with aromas of cherry and sweet fruit flavors.

The weather is incredibly nice right now, but the clock is quickly ticking to when Arizona temperatures will rise from “just hot enough to enjoy the heat on your face,” to “I can’t breathe because it’s so stinking hot out!”

 

 

 
So naturally, we spend as much time in the beautiful outdoors as we possibly can right now, soaking up the sun while floating in the pool and, of course, barbecuing something delicious on the grill. Hands down, my favorite things to grill are seafood and vegetables of all kinds.

 

 

 

 

 

 

 

 

 

 

 

 

 

These salmon burgers go from ordinary to extraordinary when you throw them on the grill. Gallo Family Vineyard’s Pinot Noir brings out the fresh tarragon and earthy char flavors while the cool, creamy tzatziki with dill and cucumbers balances out the heat.

TIME        15 MINUTES              SERVES   6   (depending on how big you make your burgers)

You Will Need

6 Kaiser Buns
4, 6 oz cans of Alaskan Salmon
3 whole, free range eggs
1/2 cup Italian flavored Panko Bread Crumbs
1/2 teaspoon sea salt
oil for greasing grill

Tzatziki

2 cups Organic, plain, fat free Greek yogurt
1 large seedless cucumber, diced
1 tablespoon dry dill weed

fresh Tarragon for garnish (adds an extra bit of yumminess ;)
sliced mini sweet peppers
Kalamata olives

In a large bowl mix with salmon, bread crumbs, eggs and salt. Can add more Italian or Greek seasoning to taste. Over a preheated, greased grill on medium heat (or on a grill pan indoors) cook salmon burgers for about 5-6 minutes on each side. Try not to lift them with a spatula too soon or they will fall apart.

Meanwhile, mix ingredients together for the Tzatziki. Serve hot with tzatziki and garnishes.
