Mexican Chopped Salad

This salad has a ton of fresh, raw vegetables in it and a ton of flavor! Every single bite offers different flavors ranging from slightly sweet, tangy, salty and piquant to pleasantly please the pickiest palate. The colors are so vibrant and then there’s the crumbled cheese, it’s really a show stopper.

Start by adding chopped crunch Romaine lettuce then add all of your favorite veggies!

I used Radish, Cucumber, Carrot, Red Bell Pepper, Roma Tomatoes, Corn, Red Cabbage

and then added Black Beans, Avocado, Red Onion, Black Olives and Cilantro.

Want this to be even heartier or to please your favorite meat eater?

Add grilled fish, chicken or bacon!

Sprinkle with Cotija Cheese, it crumbles beautifully and adds an amazing slightly salty, tangy flavor!

Finish by drizzling some Mexican Creme all over the top!

TIME 15 MINUTES SERVES 6

You Will Need

1 head, Romaine lettuce, chopped into small pieces
2 cups red cabbage, sliced thinly
1 large red bell pepper, diced
6-8 radishes, washed and diced
1 large cucumber, diced, seeds scooped out
3-4 Roma tomatoes, seeds removed, diced
3 carrots, peeled and diced
1 cup frozen sweet corn, thawed
1/2 cup red onion, diced (or green onions)
2 large avocados, sliced
1 can black beans, rinsed
1 large handful cilantro, chopped roughly
Black Olives
1/2 cup Cotija cheese, crumbled
1/4 cup Mexican Crema (or sour cream watered down a bit)

Optional:
Grilled, diced chicken, grilled fish, cooked bacon, crumbled.
Want some heat? Add sliced, pickled jalapenos.

For the Lime Vinaigrette

juice of 3 limes
1 tablespoon finely chopped cilantro
2 tablespoons good quality extra virgin olive oil (I always use Pompeian)
1/4 teaspoon chili powder
1/8 teaspoon cumin
dash cayenne for heat if you please

Whisk all ingredients together until blended

Putting it All Together

Add all of the chopped vegetables and beans in a large shallow bowl. Either line them up like I did for presentation or simply toss them all together. Sprinkle on onion, cilantro, and Cotija cheese. Drizzle with Mexican crema and Lime Vinaigrette.
