New Way To Make Chicken

It’s a new way for us.  Not a new way.  For Mother’s Day, we needed a fast way to cook a whole chicken.  I wanted to make one in the cast iron skillet. Searched on DuckDuckGo and found one from the NY Times.

It was amazing and simple.

1.  Pre-heat the oven to 500 degrees.

2.  Take the whole chicken, pat it dry.  Take a knife and splay the legs/thighs so they lay flat.  You cut the legs away from the body.

3.  Brush the chicken with some sort of fat.  We used leftover bacon fat.  Then season it with whatever you want.  We used salt and pepper.

4.  Put the chicken in the pan, and put it in the oven for an hour if it’s 4-5lbs.  Shorten it if it’s smaller.  We tossed some carrots and potatoes in the pan.

5.  Pull it out, let it rest, cut it up and serve it.  We had a nice Chardonnay with it.  Amazing.

By the way, in the morning we tried something interesting for breakfast.  Bought some Simple Mills muffin mix.  It was amazingly good.  Simple Mills is paleo, gluten free, low glycemic.  If you are on those diets, or worried about sugar intake, hello diabetics, give it a try and leave a comment.
