      why don’t you cook something delicious with probiotics contents? the author asks.

      But heat destroys probiotics. Tempeh can be eaten raw, as in a salad with veganaise and celery, or only lightly cooked so that the probiotics inside are not destroyed.

      Sadly, I find that tempeh tastes best when fried to a crispy degree in oil, which kills most of the probiotics.

      Other natural sources of probiotics are raw sauerkraut, unpasturized olives, and miso (if not excessively heated).
