Toasted Savory Oats With Chicken and Bacon

After confessing my recent boredom with breakfast in the GreenLiteBites Fb Group, I was presented with tons of fantastic ideas. My favorite being savory oats.

Now, I’ve made savory oats before for dinner, and I’m a huge fan, but for some reason, the idea of having them in the A.M. never occurred to me.

Well, I have seen the error of my ways!

Introducing my NEW favorite breakfast (I go through phases) Toasted Savory Oats with Chicken and Bacon. I’ve made this a few times now to get it just right, and this is my favorite combo.

I just got finished eating this while posting. It’s such a warm bowl of awesome to start the day. Savory oats are like comfort in a bowl.

Toasted Savory Oats with Chicken and Bacon

prep 1 min - cook 10 mins - total 11 mins

Mix up breakfast with these toasted Savory Oats with Chicken and Bacon or better yet, have them for dinner! 

Ingredients

• 1 slice uncooked bacon cut into small pieces 
• 1/4 cup Old Fashioned oats (40g) 
• 3/4 chicken broth/stock
• 4oz cooked chicken 
• dried thyme, parsley and red pepper flakes for sprinkling 

Instructions

In a small saucepan render the bacon over medium-high heat. If it looks like a lot of fat came out of the bacon soak some of it up with a paper towel.

Add the uncooked oats to the bacon and toast for 1-2 minutes tossing now and then until they just start to brown. You should smell the oats toasting.

Add the broth and cook until the oats soak most of it up.

Stir in the cooked chicken and cook for another minute to bring them up to temperature.
