What bothers me is WHY God would allow them to be subject to EVIL in the first place knowing the consequences? I know you tried to explain it but I put it this way.
Say you had a kid that wanted to run across a busy freeway after you told him what would happen but he still insisted to run across the busy freeway. Would you allow that?
NO YOU WOULD NOT even though your child insisted to do so.
So, why did God allow Adam & Eve to take the fruit knowing the severe unforgivable consequences? And that brings me to this and I will put it indirectly – shouldn’t forgiveness be the other way around that man should forgive???

I too, have grappled with this question. The best answer I could find is that the fall was inevitable given free will. If no fall took place, that would be symmetrical to having no freedom to choose to disobey God. God doesn’t want robots, but rather those who gladly choose to worship Him in spirit and truth. Man demonstrated this ability to choose by remaining faithful for a time, and then later disobeying God. Ultimately it is God Who chooses whom he saves, even while free will is preserved. It can not be any other way because God knows the beginning from the end, as well as the ramification for any and every event that takes place. God knows how every action on His part will affect the decision to believe or reject God on the part of people. Since He knows this, He cannot help but determine who believes in Him. So your exercise of free will to believe in Jesus is preserved, even while God chooses the circumstances that affect your free will.
Why would God choose to create while knowing the extreme suffering for the casualties of free will who reject Him? My belief is that the inevitable casualties who go to the lake of fire are an unfortunate cost deemed acceptable for the sake of those who will enjoy God forever. Those adopted children of God who are saved and have free will, would not exist if those who rejected God did not also exist. God allows the possibility of damnation for the sake of those who ultimately become saved. So you may choose God, but God chose you first, or else you couldn’t have chosen Him. At least that’s the best I could come up with whether true or not.
