I imagine that although doesn’t that Jewish law no longer applies – this can be understood as saying that that law is itself UNDER grace – in practice non-jews did not need to follow Jewish law as they and God hadn’t signed up to that.

Jesus was referring to the living bread as his flesh. It would have been breaking Jewish to actually drink blood as Jewish law considered a man’s soul to be in his circulating blood. If a limb was chopped off, for example, then the blood would no longer circulate in it as it would the remaining body and it would no longer be considered to have a soul. As the body wouldn’t once it was dead and blood no longer circulated within it.
