Orange Dream Cupcakes
This citrus spin on a classic cupcake is sure to brighten anyone’s day!! Yes those are dino themed sprinkles you are seeing – these little guys brought with them an end to our dinosaur theme – but quite deliciously. Even my husband proudly packed a few of these suckers into his lunch bag to share with co-workers with no shame of the kid-friendly topped frosting. You’re never too old to enjoy sprinkles on top of…well anything!!
The Cupcakes
Ingredients
- 1/2 cup butter
- 1 cup sugar
- 2 large eggs
- 1 tsp. vanilla extract
- 1/2 tsp. orange extract
- 1 3/4 cups flour, sifted
- 1/2 tsp. salt
- 2 1/2 tsp. baking powder
- 1/2 cup orange juice
How-To
1. Preheat oven to 350. Combine butter, sugar, eggs, vanilla and orange extract together in a large bowl. Mix until smooth and creamy.
2. In a separate bowl whisk together flour, salt and baking powder. Add dry ingredients to creamed ingredients in 3 portions alternating with portions of the orange juice.
3. Spoon batter into cupcake liners until 2/3 full. Bake for 18-20 minutes or until toothpick comes out clean. Allow cupcakes to cool before adding frosting.
Orange Frosting
Ingredients
- 1/2 cup butter
- 3-4 cups icing sugar
- 1/2 tsp. vanilla extract
- 1/2 tsp. orange extract
- 1/8 cup fresh orange juice
How-To
1. Beat butter until light and creamy. Add the icing sugar, vanilla extract, orange extract and orange juice and whip until fluffy. Add more icing sugar to thicken or more orange juice to moisten. To achieve more of an orange color add a drop or two of food coloring.
2. Frost yo cupcakes.
