Low Carb Lasagna

My husband has Italian blood running through him (hence the last name…), but he isn’t a fan of red sauce and pasta. What?!? I know…I am sad for me too. But then again, it’s probably a good thing that I don’t consume tons of pasta.

I look for ways to sneak in my love of lasagna while appealing to my whole family. Here’s my low carb version. It takes no time to cook up a delicious meal that your whole family will enjoy.

Simply drain your tomatoes, add one tablespoon of chopped garlic, a pinch of sea salt, and one teaspoon of oregano leaves to a pot. Simmer while you cook your hamburger meat in a pan. You can add mushrooms if you’d like. Once your hamburger meat is browned, drain it and rinse well.

Layer your ricotta cheese or cottage cheese (low fat or full fat, your choice) in the bottom of an oven safe dish. Add hamburger and then tomato mixture. I alternated between the three until the meat and tomatoes were gone.

Sprinkle with a cup of mozzarella cheese and bake for 30 minutes in a 350 degree oven.

I let mine sit for about 5 minutes while I prepped a salad to go with it. You can use low fat versions of the cheeses if you’d like. It’s delicious either way!
