Holland America Line’s Sangria Recipe

Next time you are on a Holland America cruise, we strongly suggest taking a cooking class or sitting through a presentation of America’s Test Kitchen. This Sangria recipe is one they provide during the tapas class where you enjoy Sangria, a Spanish tortilla with aioli & Spanish-style garlic shrimp. These pair well with other Holland America recipes including patatas bravas & paella on the grill.

INGREDIENTS:
2 large oranges, well washed
1 large lemon, well washed and sliced
¼ cup superfine sugar
2 red apples, well washed, cored and chopped
¼ cup triple sec
¼ cup brandy, or a mixture of half brandy and half Grand Marnier
1 (750 milliliter) bottle inexpensive fry red wine (such as roja), chilled
½ cup sparkling water, chilled (optional)
6 ice cubes

DIRECTIONS:
1. Slice one orange and juice the other; set them aside separately.

2. In a large pitcher, combine the orange slices, lemon slices and sugar. With a wooden spoon, mash the fruit gently until some juice is released and the sugar dissolves but the fruit isn’t totally crushed. Stir in the apples, the reserved fresh orange juice, triple sec, brandy and wine. Refrigerate for at least 2 hours or overnight.

3. Right before serving, stir in the sparking water (if using) and the ice cubes, making sure to reach the fruit that has settled on the bottom. Divide the sangria among the glasses – let a few pieces of fruit pour into each one – and serve immediately.

Notes:
It’s suggested that you add a touch of Grand Marnier if you’ve got it on hand; it will impact a subtle citrusy flavor and aroma. The option of adding sparkling water is there because it will also help lift the aromas to the nose, though it can be omitted completely if you’d prefer. In addition to citrus fruits, almost any fresh fruit except bananas can be added to sangria. Try pitted cherries, slices peaches, or diced pears and plums. Stir in softer fruits right before serving so they remain intact.

The longer sangria sits before drinking, the more smooth and mellow it will taste. A full day is best, but if that’s impossible, give it an absolute minimum of two hours to sit. Use large, heavy, juicy oranges and lemons for the best flavor. If you can’t find superfine sugar, process an equal amount of granulated sugar in a food processor for 30 seconds. Doubling or tripling the recipe is fine, but you’ll have to switch to a large punch bowl in place of the pitcher. An inexpensive Merlot is the best choice for this recipe.

Carnival Cruise Line’s Pineapple Mango Rum Punch Recipe

Carnival Cruises is known for their impressive cocktail selection. Some of their most popular recipes include their FUN SHIP drink, Tropical Lifesaver, Coco Loco, Beachcomber, Ultimate Satan and this Mango Rum Punch we are sharing with you.

Ingredients for Pineapple Mango Rum Punch (servings 1 cocktail)

• 3 oz of pineapple coconut juice
• 3 oz of coconut rum (you can also use light or dark rum here instead)
• 1 oz of mango juice
• 1 oz of orange juice
• splash of grenadine (mainly just for looks)
• lime slices and/or orange zest for garnish
• edible flowers for garnish

Note for making larger batches:If making a punch, rather than a single drink, treat the ounce numbers above as parts instead. So, for example, if you’re making a large batch of pineapple mango rum punch, you’d use 3 parts pineapple coconut juice, 3 parts coconut rum, 1 part mango juice, and 1 part orange juice.

How to Make Pineapple Mango Rum Punch
Combine all juices (pineapple coconut, mango, and orange) and rum. Then stir. Pour over ice and add a splash of grenadine for color. The grenadine will fall to the bottom and give the drink a pretty ombre look. Then, add lime, orange zest, and edible flowers for garnish.
