Broccoli with Garlic and Soy Sauce with Grilled Chicken and a Goat Cheese Salad Dressing
Yesterday I went to the local farmer’s market and got some great broccoli, goat cheese, lettuces and all kinds of goodies. I decided to do a couple of different dishes and see how they turned out – Here’s what we did:
- 6 thinly sliced boneless skinless chicken breasts
- about 4 heads of broccoli
- 3 cloves garlic chopped
- pinch of red pepper flake
- 1/3 cup of soy sauce
- 1/2 cup extra virgin olive oil
- 1/4 cup white wine vinegar
- 3-4 tablespoons goat cheese
- salt and pepper
- lettuce, tomato, cucumber (or any of your favorite ingredients) salad
In a mixing bowl, combine the oil and vinegar. Add the goat cheese and whisk till it’s combined and creamy. Salt and pepper to taste and add some herbs if you like. Cover and set aside.
Clean the broccoli and trim off the florets, set aside. Pull any leaves off the stalks, and with a vegetable peeler, peel away any of the tough outer stalk, leaving the tender green inside. Slice into coins and set aside with the florets.
Put a grill pan on the stove to med/high heat and grill your chicken breasts, turning every three or four minutes if you want cross hatch grill marks, or just till it’s done to your liking. If the chicken is done before everything else, put it on a plate and cover tightly with foil.
Put a steamer on high heat with enough water to cover the bottom, but not so much that it comes up over the insert.
Steam the broccoli till it’s bright green and remove the insert to a clean sink or other safe area.
Dump the water out of the pot and put it back on the burner.
Add some olive oil to the pan and when it ribbons, add the garlic and red pepper flake, saute for a minute and then add the broccoli back to the pot, stirring to get everything coated. Pour the soy sauce in, stir to coat, cover and take off the heat.
Plate a piece of chicken, some broccoli, some salad on the plate and pour the dressing over the salad – it will combine with the soy sauce on the plate and really makes for an interesting combination.
The whole family devoured this! The salty soy sauce, tangy vinegar and goat cheese and garlic throughout really made for a great meal in a hurry!
