One Pot Pasta Puttanesca in 15 Minutes… Sorta

You know how I love a quick, delicious dinner, right? Well today I needed one.  I did not have the best day and I wanted something fast, but really tasty and I was really in the mood for Puttanesca… Here’s what I did.

• 1 lb. whole wheat angel hair (Hodgson Mills cooks in less than 5 minutes!)
• 3 cloves garlic, peeled and chopped
• 4 plum tomatoes, chopped
• 1 can black olives, roughly chopped
• 1/2 jar (about 3 tablespoons) capers
• olive oil
• 1/3 cup Balsamic vinegar
• 1/2 cup vegetable broth
• salt and pepper

Put up a pot of very well salted water to boil.  Put about 2 tablespoons of olive oil in the water to prevent sticking.  Cook the pasta according to package directions.  Cook it until it’s almost exactly the way you like it, it will do some more cooking in the sauce.  Drain the pasta, toss with tongs to further prevent sticking and set aside.

Heat the pot back up and add about 2 tablespoons of olive oil. When it ribbons, add the garlic.  Stir and then add the tomatoes with a big pinch of salt.  Let them cook down until they start to release a lot of liquid.

Add the olives, capers, and vinegar.  Let this almost boil and the vinegar will start to reduce.  When it’s reduced by about a third, add the broth.

Stir to combine. When this smells so good that you want to put your face in it, add the pasta back in and gently toss to combine.  Plate, salt and pepper to taste and serve.

So comforting and tasty you won’t believe how quick it comes together.  Not exactly Puttanesca, but close enough for me!
