Cilantro-Lime, Garlic Hummus Sweet Pepper Poppers
I love using football season as an excuse to basically eat a variety of my favorite appetizers in place of dinner. The air is crisper and cooler, the buzz of excitement and camaraderie is in the air and friends are gathered together adorning their beloved football teams jersey. Whether your throwing a small party at home or packing it out to tailgate next to the stadium, no doubt food is the center of attention. Well, I suppose there are the players…..
My passion, obviously is good food. It makes or breaks a party and can always be a conversation starter and a way to bring people together, opposing team fans or not. Where there is really good food amity and camaraderie are sure to be found.
I like to focus on an array of fun appetizers during football season. Not only is it simple and fun but you get the best of both World’s. Finger foods equal snacking which means you can grab a bit of this and a little of that and munch away while socializing with friends and family. You just can’t go wrong with appetizers.
One of the appetizers I ALWAYS have available for my gatherings is Sabra hummus. It’s my favorite, healthy snack and it”s so versatile. Made from protein packed chickpeas and sesame seeds and heart healthy olive oil, hummus is a power house healthy snack. You can always take hummus to a whole other level by making layered dips, mixing it up with chicken instead of mayonnaise in these delicious Chicken and Roasted Red Pepper Hummus Flautas or combining it with some of your other favorite flavors like cilantro-lime and stuffing them into these sweet little peppers. Topped with cheese obviously.
TIME 10 MINUTES YIELDS 24 POPPERSYou Will Need
12 mini sweet peppers (sold in most grocery stores)
1, 10 oz container of Sabra’s Garlic Hummus
1 large handful (about 1/4 cup chopped) cilantro
2 tablespoons fresh lime juice
2 tablespoons scallions (white part of green onion) diced
2 tablespoons Cotija Cheese (crumbly Mexican cheese) or FetaPutting it all Together
In a small food processor pulse cilantro and scallions until coarse. You can also do this with a butcher’s knife. Combine this mixture in a small bowl with Sabra Garlic Hummus and lime juice. Using a small spoon, fill the halved sweet peppers with the hummus mixture. Place on a serving platter and sprinkle with cheese.
