The Backyard Weed That Produces One of the World’s Most Nutritious Seeds
Every summer, gardeners and farmers across the country go to war with a plant they consider Public Enemy Number One.
Pigweed pushes up between rows of sweet corn, crowds the tomatoes, and takes over bare ground around the chicken yard. It grows fast, produces mountains of seed, and can come roaring back after a hurried pass with the hoe.
Farmers spend millions of dollars trying to kill it. Some species have even developed resistance to several common herbicides, turning ordinary fields into battlegrounds.
And yet, here’s the part most folks never hear.
That troublesome weed belongs to the genus Amaranthus… the same family that gave ancient civilizations one of their most treasured food crops. Its young leaves can be cooked like spinach, while its tiny seeds are packed with protein, minerals, fiber, and an unusually useful mix of amino acids.
The irony is hard to miss. The plant everybody is fighting to eradicate may be quietly offering to help feed the family.
If pigweed is growing on clean, unsprayed ground around your homestead, you may not have just a weed.
You may have a crop that planted itself.
First, Make Sure You Know What You’re Harvesting

“Pigweed” isn’t the name of one particular plant. It’s a loose country name used for several members of the Amaranthus family, and many of them look remarkably similar when they’re young.
That means good identification matters.
The species many homesteaders encounter is redroot pigweed, or Amaranthus retroflexus. Its common name gives away one of its handiest identifying marks: pull a young plant and look at the taproot and lower stem. You’ll often see a pinkish-red or reddish color near the crown (UC Agriculture and Natural Resources).
As it grows, redroot pigweed becomes an upright, coarse-looking annual. It commonly reaches three to four feet tall, but in rich garden soil it can stretch much higher (UC Agriculture and Natural Resources).
The leaves are usually oval, egg-shaped, or diamond-shaped, with slightly wavy edges. Some display a faint V-shaped marking. Redroot pigweed also has fine hairs along its stems, leaf stalks, and leaf veins—a useful clue because Palmer amaranth and waterhemp are generally smooth or nearly hairless (Cornell CALS).
Then, as summer rolls toward fall, thick green flower clusters develop at the ends of the stems and in the leaf joints. Those bristly clusters eventually dry down and hold thousands of tiny, hard seeds.
Other common relatives include smooth pigweed, or A. hybridus; Palmer amaranth, or A. palmeri; and cultivated grain amaranths such as A. cruentus, A. hypochondriacus, and A. caudatus.
However, don’t harvest a plant based on a photograph or common name alone. Use a reliable regional field guide or ask your local extension office to confirm it, especially if you’re identifying wild amaranth for the first time.
The Ground Matters as Much as the Plant
Before you bring home a basket, take a hard look at where the plant is growing.
Don’t harvest pigweed from roadsides, industrial lots, drainage ditches, conventional crop fields, or any place that may have been sprayed with herbicides or pesticides. Plants growing around old buildings, dumps, treated lumber, contaminated soil, or livestock waste should also be left alone.
In addition, amaranth leaves can accumulate nitrates when plants grow in heavily fertilized soil or under certain stressful conditions. This is especially important when feeding large quantities to livestock, but it’s another good reason to harvest tender greens from clean ground and eat them as one part of a varied diet—not by the washtub.
Like spinach, chard, and beet greens, amaranth leaves also contain oxalates. Most healthy people can enjoy cooked amaranth greens in ordinary food portions, but anyone with a history of calcium-oxalate kidney stones may want to limit high-oxalate greens or discuss them with a healthcare professional.
Cooking the leaves and discarding the cooking water can reduce some of those compounds.
The old rule still holds: identify it correctly, know the ground, and don’t overdo it.
A Nutritional Powerhouse Hiding in Plain Sight
What makes amaranth remarkable isn’t simply that it can be eaten. It’s the amount of useful food packed into such a small seed.
Depending on the species, variety, and growing conditions, amaranth seed may contain roughly 13 to 19 percent protein (PMC). That puts it alongside—or above—many familiar cereal grains.
Still, the bigger story is the balance of amino acids.
Wheat, corn, and rice are relatively low in lysine, an essential amino acid the body must obtain from food. Amaranth contains considerably more lysine than many common grains, which makes it a useful companion to a pantry built around wheat flour, cornmeal, oats, or rice (Phytojournal).
In other words, amaranth doesn’t have to replace the grain already in your pantry. It can help make that pantry nutritionally stronger.
A quarter-cup of dry amaranth contains approximately 179 calories, 7 grams of protein, 3 grams of fat, and 3 grams of fiber (WebMD). It also supplies useful amounts of minerals, including iron, magnesium, and calcium (Liebherr).
Now, that doesn’t make amaranth a magical “perfect protein” or a replacement for a varied diet. But it does make the seed unusually valuable for something most folks yank from the garden and throw over the fence.
And the seeds are only half the harvest.
Young amaranth leaves can be gathered weeks or even months before the seed heads are ready. That gives the homesteader two different foods from the same volunteer plant: fresh greens during the growing season and dry seed for the pantry.
Harvest the Greens While They’re Young
The best amaranth greens come from young, rapidly growing plants. Once the stems grow thick and the flowers appear, the leaves become tougher and their flavor grows stronger.
So, early in the season, pinch off the tender tips and young leaves just as you would harvest spinach, lambsquarters, or beet greens. A light harvest encourages the plant to branch and continue producing.
Don’t strip every leaf from a plant you intend to keep for seed. Instead, take a few tender leaves from several plants, leaving enough foliage behind to power continued growth.
In the kitchen, wash the leaves thoroughly and cook them as you would spinach. They can be sautéed with garlic and butter, stirred into scrambled eggs, dropped into soup, or simmered alongside beans.
The flavor is earthy and green, somewhere between spinach and beet greens.
For the mildest dish, boil the leaves briefly, discard the water, and then season them in a skillet. Older leaves generally benefit from longer cooking, while the youngest leaves need only a quick wilt.
Let the Seed Heads Tell You When They’re Ready
Harvesting amaranth seed takes a little patience because the whole plant rarely ripens at once.
As the season advances, the flower heads begin changing from green to tan, brown, rust, or reddish bronze. The seeds inside should feel dry and hard rather than milky or soft (FaithArt).
Here’s the simplest field test: cup a seed head between your hands and rub it briskly. If mature seeds break loose and collect in your palm, the head is ready (Gardening Know How).
Cut the ripest seed heads first, leaving the greener ones to finish. Use pruning shears, a knife, or a small sickle, and cut several inches below the flower cluster so you have a handle for carrying and drying it (FaithArt).
If birds are beginning to work the seed heads—or if a hard rain is coming—don’t wait too long. A ripe amaranth head can go from loaded to scattered in a hurry.
Place the cut heads in paper sacks, old pillowcases, baskets, or tubs as you move through the patch. Avoid tightly packed plastic bags, which hold moisture and can quickly turn a good harvest into a moldy mess.
Dry It Slowly and Don’t Invite Mold
Once the seed heads are cut, spread them in a single layer on a clean tarp, screen, or drying rack. You can also tie them into small bundles and hang them upside down in a shaded, well-ventilated shed or barn.
Depending on humidity and airflow, drying may take one to three weeks (Texas Real Food). Turn the heads occasionally and watch closely for damp spots.
Don’t rush this part.
Seed sealed away with leftover moisture can mold, heat up, or begin sprouting. A few extra drying days are cheap insurance compared with losing the entire batch.
When the flower clusters feel crisp and crumble readily between your fingers, you’re ready to thresh.
Threshing Without Buying Another Machine
Despite the fancy word, threshing simply means knocking the seed loose from the dry plant material.
For a small harvest, rub the dried heads between gloved hands over a wide bucket or washtub. The seeds, dry flowers, and bits of stem will fall together into the container.
For a larger pile, place the seed heads on a clean tarp, fold the tarp over them, and gently walk across the bundle with clean shoes. You can also beat the covered heads with a smooth stick or simple homemade flail (FaithArt).
You’re not trying to pulverize everything. You only need enough pressure to shake the tiny seeds free.
And tiny they are.
Amaranth seeds are smaller than many poppy seeds, which makes them slippery, easy to spill, and a little frustrating the first time you work with them. Use wide containers and choose a calm workspace until you’re ready to winnow.
Let the Wind Clean the Harvest
Once the seed is separated, you’ll have a mixture of grain, flower fragments, dust, and bits of dry leaf. Winnowing removes the lighter material.

Start close to the lower bucket. As you get a feel for the wind, raise the pouring container a little higher.

It may take several passes to get perfectly clean grain. Still, even a modest patch can produce an impressive amount because a single mature pigweed plant may carry tens of thousands of seeds.
That prolific habit is what makes pigweed such a headache in a farm field—and such an interesting food crop on a carefully managed homestead.
Three Simple Ways to Cook Amaranth
Amaranth behaves differently from rice, wheat berries, or barley. Because the seeds are so small and release starch as they cook, they generally produce a thick, creamy dish rather than separate, fluffy grains.
For a porridge, combine roughly one part amaranth with two-and-a-half to three parts water. Bring it to a boil, reduce the heat, cover, and simmer for about 20 minutes, adding a little more water if necessary.
The finished porridge has a nutty, earthy flavor. Serve it sweet with milk, cinnamon, apples, honey, or maple syrup—or make it savory with broth, onions, herbs, cheese, and a fried egg.
Amaranth can also be popped.
Heat a heavy, dry skillet until it’s hot, then add only a teaspoon or two of seed at a time. Shake the pan quickly. Some seeds will pop into tiny white specks, while others will toast and darken. Pour each batch out immediately before adding the next.
Those toasted seeds make a crunchy topping for yogurt, oatmeal, salads, soups, or homemade granola.
Finally, amaranth can be ground into flour. It brings protein and a warm, nutty taste to pancakes, muffins, flatbreads, and quick breads. Because it contains no gluten, it usually works best blended with wheat flour or another flour suited to the recipe.
Put the Harvest Away for Winter
Before storing amaranth seed, make certain it’s thoroughly dry.
Clean seed can be packed into airtight glass jars, food-grade buckets with gasketed lids, or vacuum-sealed bags. Keep it in a cool, dark, dry pantry, cellar, or freezer (Texas Real Food).
Properly dried and sealed amaranth should remain useful for at least a year, and it may keep longer under cool conditions. Because the seed contains more natural oil than some common grains, cold storage can help preserve its flavor during extended storage.
The leaves won’t keep nearly as long when fresh, but they freeze well. Blanch them briefly in boiling water, cool them in ice water, squeeze out the excess moisture, and pack them into freezer bags.
You can also dehydrate young leaves until crisp and grind them into a dark green powder. A spoonful can then disappear into winter soups, stews, sauces, scrambled eggs, or smoothies.
Before You Swing That Hoe
Pigweed can certainly become a serious problem. Letting every plant mature in a garden bed is a fine way to guarantee years of future weeding.
A single plant can scatter an enormous number of seeds, and many of those seeds may remain viable in the soil for years. So this isn’t an argument for letting pigweed take over the corn patch.
It’s an argument for learning to manage what the land gives you.
Harvest the young leaves. Select a few healthy plants growing on clean, unsprayed soil. Remove the rest before they set seed, then gather the chosen seed heads before they scatter their harvest across the garden.
That turns a troublesome weed into a controlled volunteer crop.
So, the next time pigweed muscles its way between the beans and tomatoes, pause before reaching for the hoe. Look at the red base, feel the hairy stem, and inspect the developing seed head.
That “weed” may give you tender greens by midsummer and jars of protein-rich seed by fall—all without ordering a packet, preparing a seedbed, or planting a single row.
Sometimes the homestead’s most useful crops are the ones nobody invited.
